The man of the house is away on business, and that means Squirrel Momma and the little squirrelings get to have waffles for dinner.
Let me explain. For some reason my husband, who is the Iron Chef of weekend breakfasts, dislikes waffles. Which is why his absence is the perfect excuse to make them for dinner. C'mon, they're healthy--four different grains! Served with fresh fruit! And homemade whipped cream! (hey--that counts as a serving of dairy, right?)
Squirrel Momma's Waffles
makes about 1 dozen waffles (in my waffle iron)
2 cups white flour
1/4 cup rye flour
1/4 cup whole wheat flour
3 tablespoons cornmeal
3 tablespoons sugar
2 tablespoons baking powder
2 and 5/8 cups milk
3/8 cup cooking oil
3 eggs
In a large bowl whisk together the dry ingredients. In a separate bowl whisk together the wet ingredients, then add to the dry flour mixture. Whisk everything together just until well combined--you should stop when you still have small lumps in the batter. Let stand and thicken while you preheat your waffle iron.
Cook according to your waffle iron's directions--be careful not to overfill the compartments, as this batter rises quite a bit and has the tendency to create oozing primordial waffle blobs out the edges.
Also, these waffles are, for some reason I haven't figured out, hydroscopic (which is an utterly pretentious word meaning they tend to absorb humidity--feel free to use it next time your cookies go stale because they contain brown sugar). If you like your waffles crispy just put them in a warm oven for 10 or 15 minutes while you finish cooking the rest of the batch, or pop them in a toaster for 30 seconds.
And should I admit the three of us finished off an entire charger of whipped cream at one sitting? Probably not.
Mmmmm...we had multi-grain waffles last week for dinner and it was next to impossible to stop eating them. Hearty dinner fare! Though we could have used some fresh whipped cream with them :)
